You will have noticed our fruit cake bases (available to buy online!) have a rich, dark appearance and a sumptuously moist, luxurious texture… well, you may be wondering how we get them to beautiful.
We obviously can’t give away all of the secrets to our fabulous cakes but we we can share with you a bit of info about one of our favourite ingredients… mark molasses!
What is molasses I hear you ask… well, it’s basically a byproduct of sugar. To make molasses, the juice is taken from the cane by stripping it and mashing it up. Boil up the sweet juices and the sugar will crystallise and you’ll be left with some cane syrup. Boil it up again and more sugar is extracted, giving it more sweetness and a little bitterness (like black treacle) – that’s the molasses!
It looks amazing; black, thick syrup which is beautifully sweet.
Of course we won’t tell you what we do with it next, but oh it’s tasty and makes for a beautiful fruit cake.
