As you know, we just love fruit cake and we’re so pleased that our fruit cake bases are going down so well in the sugarcraft trade that we’re taking the plunge and developing a range of four different ‘topped’ fruit cakes which you’ll be able to buy in garden centres, delis, tearooms and cafes around the country.
Two of the four cakes will use the traditional rich, dark fruit cake we use for the base cakes. People just love them so it makes perfect sense. We’ve created a gorgeous cherry and chopped almond topping and are still working on perfecting a dark chocolate and orange cake which will contain dark Belgian chocolate chunks blended into the fruit cake mix, a dash of Cointreau and juicy orange segments on top!
We’re also creating two slightly lighter cakes. These will still be very moist and packed full of juicy fruit, but with a bit less black treacle and dark molasses we’re creating a lighter taste. These will be topped with dates & walnuts or a trio of nuts (whole brazils, walnut pieces and chopped almonds).
Here’s a pic of one of the cakes we made on a test-run. It’s the lighter base with a cherry and almond topping – looks pretty tasty eh!
